Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Layer the minced ham and sliced potatoes alternately in a dish, seasoning the ham with pepper.

  2. Prepare the cream sauce by melting butter in a saucepan, stirring in flour, and slowly adding milk and pepper until it boils.

  3. Take a heaping tablespoon of the sauce and mix it with the beaten eggs, then add this mixture back to the sauce.

Assemble and bake

  1. Pour the sauce over the layered ham and potatoes, then sprinkle with bread crumbs.

  2. Bake in a 400°F (200°C) oven for 15 minutes until browned.

What each ingredient does

Eggs
Set the sauce into a richer, thicker custard-like texture when gently heated.
Flour
Thickens the melted butter and milk into a smooth, cohesive cream sauce.
Milk
Forms the liquid base of the sauce, giving it moisture and a creamy body.
Potatoes
Form the bulk of the dish and soak up sauce, adding soft, tender texture.
Bread crumbs
Form a crust on top that browns in the oven, adding crispness and color.
Boiled ham
Provides the savory, salty meat flavor that carries through the layers.

The step that matters

Adding the eggs to the sauce. Eggs scramble if they meet hot sauce directly. Mixing a spoonful of the hot sauce into the beaten eggs first gently raises their temperature, so they blend in and thicken the sauce smoothly instead of curdling.
