Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meat body and structure of the loaf.
Pork
Adds fat and moisture, keeping the loaf from drying out.
Eggs
Bind the mixture and set as it bakes, holding the loaf together.
Bread crumbs
Absorb liquid and soften the texture, helping the loaf stay tender.
Cream or milk
Adds moisture and tenderness to the meat mixture.

The step that matters

Mix the meat and binders thoroughly. Even mixing spreads the eggs and crumbs through the meat so the loaf binds evenly and slices cleanly rather than crumbling in patches.
