Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set when baked, forming the main body of the dish.
Milk
Forms the liquid base of the sauce and gives it a soft, creamy texture.
Bread crumbs
Thicken the sauce and give it body as they absorb liquid.
Butter and flour
Together form a roux that thickens the milk into a smooth sauce.
Spanish onion
Infuses the milk with savory flavor and adds body once pressed through a sieve.

The step that matters

Baking until the eggs are just set. Eggs turn firm and rubbery when overbaked or overheated, so they should be removed once the whites are opaque and the yolks still look soft.

Swap the white pepper

How well each one fits the dish's main ingredients (onion, milk, clove, butter, flour, bread, mace):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Allspicefits better
  4. White pepperthe original

Fit is the average pairing score against onion, milk, clove, butter, flour, bread, mace. Candidates are from the same food group and used in at least 100 recipes.
