Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the sweet base that sets into the chewy, brittle-to-tender taffy structure as it cooks.
Cream of tartar
Acidity that helps prevent the sugar from crystallising, keeping the taffy smooth.
Butter
Adds fat for a softer bite and richer flavour in the finished taffy.
Shelled walnuts or peanuts
Adds nutty flavour and crunch throughout the taffy.

The step that matters

Boil to hard crack stage. Sugar syrup must reach the hard crack temperature range to set firm once cooled. Stopping early leaves a sticky taffy, while overcooking makes it brittle and possibly scorched.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, cream, butter, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, cream, butter, vanilla. Candidates are from the same food group and used in at least 100 recipes.
