Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mixture

  1. Soak the bread crumbs in fresh milk.

  2. In a bowl, beat the eggs and add them to the soaked bread crumbs.

  3. Stir in the butter and grated cheese.

Bake

  1. Transfer the mixture to a baking dish and spread the bread crumbs on top.

  2. Bake at 350°F (175°C) until golden brown.

What each ingredient does

Bread crumbs
Absorb the milk and give the dish a soft, body-filled structure.
Fresh milk
Adds moisture and softens the bread crumbs so the mixture stays tender.
Eggs
Bind the mixture and set as it bakes, giving a firm, custard-like texture.
Grated cheese
Adds rich flavor and fat, and melts through the mixture as it bakes.
Butter
Adds fat for richness and a smoother, more tender texture.

The step that matters

Bake until golden brown, not longer. Egg proteins set as they heat, and overbaking makes them tight and rubbery and can make the cheese grainy and oily. Pulling the dish when the top is golden keeps the texture soft.
