Why it works: Chicken and lemon are a kitchen classic. They rank in the top 16% of all ingredient pairs, and cooks put them together in 5,092 recipes. Both carry (e,e)-2,4-decadienal, which smells fatty, deep fried. The science ↓

Chicken Jelly

Ingredients

Directions

Make the broth

  1. Boil the chickens until the meat can be pulled off the bones.

  2. Remove the meat and continue boiling the bones for an additional 30 minutes.

  3. Allow the broth to cool; it will gel as it cools.

Set the jelly

  1. The next day, cut the chicken meat into small pieces.

  2. Melt the jelly and season with salt, spices, and lemon juice.

  3. Mix in the chopped boiled eggs.

  4. If in a hurry, pour the melted jelly over the chicken and let it set in a cool place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chickens
Provide the meat and the bones that release gelatin into the broth to form the jelly.
Boiled eggs
Add texture and a firm, mild contrast to the soft jelly and chicken.

The step that matters

Allowing the broth to cool and gel. The jelly sets only as the gelatin released from the bones cools and firms. Melting and reusing it or setting it too soon in a warm place can leave it loose, so it needs time in a cool place to firm fully.

Swap the lemon

How well each one fits the dish's main ingredients (chicken, egg):

  1. Lemonthe original
  2. Coconutfits about as well
  3. Pumpkinfits about as well
  4. Grapefits less well

Fit is the average pairing score against chicken, egg. Candidates are from the same food group and used in at least 100 recipes.
