What each ingredient does

Wheat flour
Provides the main structure as its proteins and starches set around the air and gas.
Baking soda
Reacts with the acidic sour milk and molasses to produce gas that lightens the bread.
Sour milk
Its acidity activates the baking soda and adds tang and tenderness to the crumb.
Molasses
Adds sweetness, moisture, and a dark color with a deep flavor.
Cornmeal (in the method)
Adds a coarse, slightly crumbly texture and a sweet corn flavor.
Egg
Binds the batter and helps give it structure as it cooks.

The step that matters

Mixing the batter. Baking soda starts producing gas as soon as it meets the acidic sour milk and molasses, so the batter should be mixed well and moved into the mold promptly to trap that gas for a light rise.
