Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Maple syrup
Provides the sweet flavour and, when cooked, the sugar structure that sets the cream.
Cream
Adds fat and moisture, giving the candy a smooth, creamy texture.
Butter
Adds richness and fat, softening the texture of the finished cream.
Walnuts
Add crunch and contrast to the smooth, soft maple cream.

The step that matters

Beat until nearly cool. Beating a cooked sugar mixture while it cools makes fine sugar crystals form, producing a smooth, creamy texture. Beating while it is still hot can make it grainy or hard.
