What each ingredient does

Tomatoes
Form the bulk of the mustard and supply moisture, body and tangy flavour.
Onions
Add savoury depth and sweetness as they cook down into the base.
Red peppers
Add colour and mild sweet flavour to the finished mixture.
Brown sugar
Adds sweetness and balances the acidity of the vinegar.
Mustard
Provides the sharp, pungent flavour that defines the condiment.
Vinegar
Adds acidity that sharpens flavour and helps preserve the mixture.

The step that matters

Adding the mustard to boiling mixture. Mustard must be fully mixed smooth before it goes in, and the mixture must be boiling hard. Uneven mixing leaves lumps, and adding it to a weak boil can stop the mixture thickening properly.

Swap the tomato

How well each one fits the dish's main ingredients (onion, pepper, sugar, mustard, vinegar):

  1. Horseradishfits better
