Velvet Cream

Ingredients

Directions

Prepare the base

  1. Soak the gelatine in cold water until soft.

  2. Chill the cream on ice and whip it until you have 3 pints of froth.

  3. Boil any remaining water (or use 1 cup of milk) with the sugar.

  4. Add the soaked gelatine to the boiling mixture and stir until dissolved.

  5. Strain the mixture into a granite pan, then add vanilla and melted chocolate if desired.

Cool and set

  1. Place the pan to cool, stirring occasionally.

  2. When the mixture is cold and thick, gently fold in the whipped cream.

  3. When nearly stiff enough to drop, pour into an oiled mould.

  4. For variety, slice red bananas and line the mould with them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable structure as it cools.
Cream
Whipped into froth, it adds lightness and a rich, smooth texture.
Sugar
Sweetens the mixture and helps give the set dessert its body.

The step that matters

Folding in the whipped cream. If the mixture is still warm or too thin, the cream will deflate and the set will be heavy. Wait until it is cold and thick so the air in the whipped cream is kept.

Swap the banana

The recipe marks banana as optional. How well each one fits the dish's main ingredients (cream, sugar, vanilla, chocolate):

  1. Coconutfits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Bananathe original

Fit is the average pairing score against cream, sugar, vanilla, chocolate. Candidates are from the same food group and used in at least 100 recipes.
