Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the cream and carries the other flavors.
Cornstarch
Thickens the milk as it heats, giving the cream its set body.
Eggs
Add richness and help set the cream as they cook.
Brown sugar
Scorched to caramel, it adds deep, toasty sweetness and color.
Blanched almonds
Add nutty aroma and a soft, delicate texture to the cream.
Butter
Adds fat for a smoother, richer mouthfeel.

The step that matters

Tempering the eggs. Adding hot mixture to beaten eggs slowly raises their temperature. Pouring them in directly would scramble the eggs and leave lumps instead of a smooth, thickened cream.

Swap the almond

How well each one fits the dish's main ingredients (milk, sugar, butter, vanilla, egg):

  1. Almondthe original
  2. Pecansfits about as well
  3. Cocoafits about as well
  4. Chestnutfits less well

Fit is the average pairing score against milk, sugar, butter, vanilla, egg. Candidates are from the same food group and used in at least 100 recipes.
