Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the pineapple liquid into a firm, sliceable structure as it cools.
Whites of 3 eggs
Whipped into foam, they lighten the mixture and give the snow its airy, fluffy texture.
Pineapple juice
Provides the main flavour and sweetness base for the dessert.

The step that matters

Fold in the egg whites gently. Folding keeps the air trapped in the whipped whites. Stirring hard or folding into warm liquid deflates the foam, leaving a dense rather than light set dessert. The mixture should be cool and only just thickened before folding.
