Watermelon Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together 2 cups white sugar and ⅔ cup butter until light and fluffy.

  3. Add ⅔ cup milk, 3 cups flour, 5 egg whites, 1 teaspoon baking soda, and 2 teaspoons cream of tartar. Mix well.

  4. In another bowl, combine 1 cup red sugar, ½ cup milk, ½ cup butter, 2 cups flour, 1 cup raisins, 5 egg whites, 1 teaspoon baking soda, and 2 teaspoons cream of tartar. Mix until smooth.

  5. Coat the raisins in powdered sugar and fold them into the red batter.

  6. Pour the red batter into the center of a greased pan and gently pour the white batter around it.

  7. Bake until a toothpick inserted in the center comes out clean.
