Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green sour apples
Provide tartness and body that soften into the sauce as it cooks.
Vinegar
Adds acidity that balances the sweetness and helps preserve the sauce.
White sugar
Adds sweetness and helps thicken the sauce as it reduces.
Brown sugar
Adds sweetness with a deeper, molasses-like flavor.
Onions
Add savory depth and bulk that break down during simmering.
Green tomatoes
Add tartness and pectin that help the chutney set as it cooks.

The step that matters

Adding the apples last and cooking slowly. Apples added late keep their shape better and avoid turning to mush, while slow cooking lets the pieces soften evenly and the sauce thicken gradually without scorching on the bottom of the pot.
