What each ingredient does

Chicken
Forms the main body of the croquette filling, giving it substance and flavor.
Thick cream sauce
Binds the chopped chicken into a soft mixture that holds its shape when rolled.
Fine bread crumbs
Form a crisp, golden outer crust when fried.
1 egg, beaten
Helps the bread crumb coating adhere and set during frying.

The step that matters

Frying in smoking hot fat. The fat must be very hot so the crumb coating crisps and browns quickly before the soft filling heats through and leaks or absorbs excess oil. Cooler fat produces greasy, pale croquettes.
