What each ingredient does

Raspberries
Provide the main fruit flavour, juice and bulk of the jam.
Sugar
Adds sweetness and, once dissolved and boiled, helps the jam thicken and set.

The step that matters

Adding the sugar in stages. Each addition must dissolve and the mixture must boil again before the next. Sugar raises the boiling point and concentrates the fruit's pectin, which lets the jam gel as it cools. Adding too much at once can stall this process.
