Chicken Croquettes

Ingredients

Directions

  1. Scald the milk or chicken stock.

  2. In a saucepan, cook butter and flour together until smooth and frothy.

  3. Gradually add the milk, stirring to make a stiff white sauce.

  4. Combine the sauce with the shredded chicken, making the mixture slightly thinner than you can handle.

  5. Add the seasonings and mix thoroughly.

  6. Spread the mixture on a platter and let it cool.

  7. Beat the eggs until smooth on a plate.

  8. Sprinkle bread crumbs on a board.

  9. Take a heaping teaspoon of the mixture and form it into a smooth ball.

  10. Roll the ball in the bread crumbs, pressing it into shape.

  11. Dip the croquette in the beaten eggs, pouring the eggs over it with a spoon.

  12. Roll the croquette in the crumbs again.

  13. Fry in hot lard until golden brown.
