Ingredients

Directions

Prepare the filling

  1. In a bowl, combine the chopped chicken, salt, parsley, celery, and lemon juice.

  2. Mix in enough cream sauce to make the mixture soft enough to handle.

  3. Spread the mixture on a plate and let it cool.

  4. Shape the cooled mixture into rolls.

Coat and fry

  1. Roll each roll in fine breadcrumbs, then dip in the beaten egg, and roll in breadcrumbs again.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked chicken
Forms the main body of the croquette filling.
Cream sauce
Binds the mixture and makes it soft enough to shape into rolls.
Fine breadcrumbs
Form a crisp, golden outer crust when fried.
Beaten egg
Helps the breadcrumb coating stick and adds structure to the crust.

The step that matters

Cooling the filling before shaping. A warm, soft mixture cannot be rolled cleanly and may fall apart. Cooling lets the cream sauce set the filling so the rolls hold their shape through breading and frying.

Swap the celery

How well each one fits the dish's main ingredients (chicken, parsley, lemon, cream, sauce, egg):

  1. Tarragonfits better
  2. Capersfits about as well
  3. Thymefits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, parsley, lemon, cream, sauce, egg. Candidates are from the same food group and used in at least 100 recipes.
