Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the filling as it cooks with the boiling water.
Egg yolks
Enrich the filling and help it set into a rich custard.
Butter
Adds fat for a smooth, rich texture in the filling.
Sugar
Sweetens the filling and helps stabilise the beaten egg whites.
Grated chocolate
Provides the chocolate flavour and body of the filling.

The step that matters

Stir in the boiling water constantly until the mixture thickens. Cornstarch only thickens fully when heated while stirred; stopping early leaves a thin filling, and stirring too little can scorch or lump it on the bottom of the pan.
