Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the sauce

  1. Dissolve the Bovril in the boiling water.

  2. In a saucepan, cream the butter until light.

  3. Add the flour and mustard, and mix until fluffy.

  4. Gradually pour the hot liquid into the mixture.

  5. Place the saucepan on the heat and stir until it begins to boil.

  6. Add the lemon juice and half the salt and cayenne pepper.

  7. Cook for six minutes.

Assemble and bake

  1. Season the shrimps and stir them into the sauce.

  2. Transfer the mixture to a shallow baking dish that holds about a quart.

  3. Cover with grated bread crumbs and dot with small pieces of the remaining butter.

  4. Bake for 20 minutes at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shrimps
Provide the main body and flavour of the dish.
Butter
Adds richness and fat, and helps the bread crumbs brown on top.
Flour
Thickens the liquid into a smooth sauce that holds the shrimps together.
Bread crumbs
Form a crisp, golden topping that browns during baking.
Bovril
Adds a savoury, meaty depth of flavour to the sauce.

The step that matters

Gradually pour the hot liquid into the mixture. Adding the hot liquid slowly while stirring keeps the flour from clumping, so the sauce becomes smooth rather than lumpy.

Swap the mustard
