What each ingredient does

Oranges
Rind and pulp supply pectin for setting and bitter flavor from the peel.
Granulated sugar
Sweetens the marmalade and, as it concentrates, helps it thicken and keep.

The step that matters

Cook until thick, stirring frequently. As water evaporates, the sugar and pectin concentrate and the mixture can scorch on the base of the kettle. Frequent stirring spreads the heat and prevents burnt flavor. The marmalade thickens as it cools because pectin and sugar form a gel.
