Small Mutton Pies

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Remove the skin and sinews from the mutton and mince it finely.

  2. In a stewpan, combine the minced mutton with stock, shallot, mushrooms, parsley, thyme, pepper, and salt.

  3. Cook the mixture over low heat for a few minutes, stirring constantly, then let it cool.

Bake and serve

  1. Fill the pastry with the cooled mutton mixture and bake for about 30 minutes at 350°F (175°C).

  2. After baking, cut the tops off the pies and fill them with additional stock if desired.

  3. Serve the pies on a napkin.
