Cutlets of Salmon and Caper Sauce

  1. Remove the skin from the salmon and cut it into cutlets.

  2. In a stewpan, melt butter with chopped shallots, mushrooms, parsley, thyme, pepper, and salt.

  3. Let the mixture cool slightly.

  4. In a separate pan, heat clarified butter.

  5. Dip the salmon cutlets in the butter and herb mixture, then coat with bread crumbs.

  6. Fry the cutlets in the pan until cooked through.

  7. Arrange the cutlets on a dish with sauce in the center.

  8. Mix capers with a little coulis, anchovy essence, lemon juice, and a dusting of sugar for the sauce.
