Ingredients

Directions

  1. Truss the legs of the boned turkey inside.

  2. Spread a layer of prepared forcemeat over the turkey.

  3. Layer strips of cooked lean ham, fat bacon, and lean veal alternately on top.

  4. Season with pepper and coarse sea salt.

  5. Cover with another layer of forcemeat and fill the turkey, maintaining its shape.

  6. Sew it up to keep its shape and wrap it in a cloth.

  7. Stew in veal or turkey stock for three hours.

  8. Check for doneness with a probe; if ready, remove the bandages.

  9. Place the turkey in a dish and press it with a weight until cold, keeping its shape.

  10. Decorate with aspic jelly and create designs like stars or flowers on top.
