Veal Scallop

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the cold roast veal or veal steak into fine pieces.

  2. Layer the veal in a pudding dish and season with pepper and coarse sea salt.

  3. Add a layer of finely powdered cracker and sprinkle bits of butter on top.

  4. Wet the layer with a little milk.

  5. Repeat the layers until the dish is full, moistening with veal gravy.

  6. Spread a thick layer of cracker crumbs mixed with milk and the beaten egg on top.

  7. Add bits of butter, cover the dish, and bake at 350°F (175°C) for 45 minutes.
