What each ingredient does

Grapes
Provide the flavour and the juice itself, with natural pectin that helps the mixture gel when cooked.
Sugar
Adds sweetness and helps preserve the juice once it is boiled and bottled.

The step that matters

Cooking the grapes until jelly-like. Grapes must be cooked long enough for their pectin to release and the skins and pulp to soften; undercooking yields weak juice that drains poorly through the jelly bag.
