What each ingredient does

Strawberries
Supply the fruit flavor and most of the jam's bulk and texture.
Sugar
Sweetens the jam and helps it thicken and keep well.

The step that matters

Boil briskly for 25 minutes. A brisk, sustained boil evaporates water and concentrates the sugar and fruit. Boiling too gently or too briefly can leave the jam runny, while overcooking can make it stiff and dull in flavor.
