What each ingredient does

Trout
The main protein, which cooks gently in the poaching liquid and becomes firm and flaky.
Clear fish jelly
Forms a glossy coating on the cooked fish that sets as it cools, protecting and presenting it.
Onion
Adds aromatic flavour to the poaching liquid.
Vinegar
Adds a little acidity to the poaching liquid, brightening the flavour of the fish.

The step that matters

Heat the fish gently after the liquid cools. Adding fish to cool liquid and bringing it only to just boiling, then simmering gently, keeps the flesh tender and moist. Vigorous boiling toughens fish protein and breaks the flesh apart.

Swap the onion

How well each one fits the dish's main ingredients (pepper, vinegar, fish):

  1. Capsicumfits better
  2. Mustardfits better
  3. Cucumberfits better
