Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the meat that is slowly cooked, then pounded into a spreadable texture.
Butter
Adds richness and fat, giving the mixture a smooth, spreadable texture.
Mace
Adds a warm, aromatic spice flavour to the pounded beef.

The step that matters

Simmer gently for 5 hours. Gentle heat in a sealed jar cooks the beef slowly and evenly without toughening it. Boiling hard or uneven heat can make the meat dry and stringy.

Swap the mace

How well each one fits the dish's main ingredients (beef, pepper, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against beef, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
