Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the chicken

  1. Skin the chicken breasts, keeping the flesh on the bone.

  2. Butter the breasts liberally and sprinkle with salt.

Cook

  1. Place in a pan and bake in a hot oven (400°F / 200°C) for 10 minutes, basting frequently with melted butter.

  2. Transfer to a broiler and brown over hot coals.

  3. In the bake pan, add the remaining melted butter, chopped onion, and milk; bring to a boil.

  4. Slowly stir in the bread crumbs and add a dash of paprika.

  5. Serve the chicken breasts on a hot platter with the bread sauce poured around them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken breasts
Provide the main protein, which firms and browns as it cooks.
Milk
Forms the liquid base of the sauce, adding creaminess and mild sweetness as it simmers.
Soft whole wheat bread crumbs
Soak up the hot milk and thicken the sauce into a soft, spoonable texture.
Butter
Adds fat for richness and helps the chicken brown while basting.
Onion
Adds savory aroma and sweetness to the sauce as it cooks in the milk.

The step that matters

Basting while baking the chicken. Frequent basting with melted butter keeps the lean meat moist and helps the surface brown evenly before broiling. Without it, the breasts can dry out.
