Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble the pie

  1. Preheat the oven to 400°F (200°C).

  2. Break the salmon into small pieces and place in a pie dish.

  3. Season with lemon juice, pepper, and coarse sea salt.

  4. Pour the velouté sauce over the salmon.

  5. Sprinkle with browned bread crumbs and bake for 5 minutes.

Prepare the garnish

  1. Separate the egg whites and yolks.

  2. Rub the yolks through a coarse sieve and chop the whites.

Decorate and serve

  1. Use the yolks, whites, and parsley to decorate the pie.

  2. Serve hot or cold.
