Roast Saddle of Mutton

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the meat

  1. Hang the meat for 5 to 10 days, depending on the weather.

  2. Trim the meat well, removing flaps and clump end for better cooking.

Roast

  1. Roast the mutton at 350°F (175°C) for about 2.5 hours.

  2. Tie the skin securely around the meat until 30 minutes before it's done.

  3. Sprinkle the meat with flour, pepper, and salt, then brown quickly.

Make the gravy and serve

  1. For the gravy, pour off excess fat from the pan.

  2. Stir in 1 tablespoon flour, a little pepper, and salt with 1 pint mutton broth.

  3. Boil for 5 minutes, skim well, and strain the gravy.

  4. Add browning if necessary and serve with currant jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton saddle
Forms the main meat that is roasted, carved and served as the dish.
Flour
Coats the meat to help it brown, and thickens the gravy with the pan juices.
Mutton broth
Provides the liquid base for the gravy, carrying flavour from the roasting pan.
Currant jelly
Adds sweetness and acidity to balance the rich, fatty mutton.

The step that matters

Brown the meat quickly after sprinkling with flour. Flour and pepper on the surface brown quickly in hot fat, building colour and flavour. Browning too slowly or too long can scorch the coating and turn it bitter.

Swap the currant

How well each one fits the dish's main ingredients (mutton, flour, pepper):

  1. Limefits better
  2. Lemonfits better
  3. Raisinfits better
  4. Currantthe original

Fit is the average pairing score against mutton, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
