Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold meat
Forms the main body of the cutlet and provides the savoury flavour.
Panada
Adds moisture and binds the minced meat so the cutlets hold their shape.
Egg
Binds the coating so the bread crumbs adhere and brown evenly in the fat.
Bread crumbs
Form a crisp, browned outer crust when fried.

The step that matters

Frying the cutlets. The fat must be hot enough to crisp and brown the coating quickly. If it is too cool, the crumbs absorb fat and turn greasy while the meat warms through.
