What each ingredient does

Sheep's kidneys
Provide the main meat, which becomes tender when cooked slowly in the sauce.
Butter
Fats the kidneys for frying and enriches the sauce with flavour and richness.
Flour
Mixed into the butter to form a roux that thickens the stock into a sauce.
Stock
Forms the liquid base of the sauce, adding savoury depth.
Mushroom ketchup
Adds concentrated savoury, umami flavour to the sauce.

The step that matters

Skim the boiled mixture well. Skimming removes foam and fat that rise during boiling, keeping the sauce clean-tasting and smooth rather than greasy or cloudy.

Swap the parsley

How well each one fits the dish's main ingredients (butter, flour, mushroom, ketchup, sauce, bread, cheese):

  1. Capersfits better
  2. Thymefits about as well
  3. Nutmegfits about as well
  4. Parsleythe original
