Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. In a large bowl, combine the flour and salt.

  2. Cream the yeast and sugar together, then add the tepid water and mix well.

  3. Place the dough in a warm spot to rise for 2 hours, or overnight.

Shape and bake

  1. After rising, knead the dough thoroughly and shape it into loaves.

  2. Let the loaves rise for 30 minutes.

  3. Bake in a preheated oven at 400°F (200°C) for 15 minutes, then reduce the temperature to 300°F (150°C) and bake for an additional 1.5 hours.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the gluten network that gives the loaves their structure.
Yeast
Produces gas that makes the dough rise and become airy.
Sugar
Feeds the yeast and helps the crust brown during baking.
Tepid water
Hydrates the flour so gluten can form and the dough can stretch.

The step that matters

Knead the dough thoroughly. Kneading aligns and strengthens the gluten strands in the flour. Well-developed gluten traps the gas from the yeast, so the loaves rise well and keep an even crumb.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (flour, sugar, milk):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Beetrootfits about as well
  4. Potatothe original

Fit is the average pairing score against flour, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
