  1. In a bowl, combine the butter, minced ham, minced liver, egg yolks, curry powder, pepper, and salt.

  2. Spread half of the croutons with the mixture.

  3. Top with the remaining croutons and press them together.

  4. Brush the sandwiches with glaze and sprinkle with chopped parsley, paprika, and the remaining egg yolks and liver rubbed through a sieve.

  5. Arrange neatly on a serving dish.
