Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Mix the arrowroot with a small amount of cold milk.

  2. Pour the mixture into the boiling milk while stirring well.

  3. Add the sugar and the yolk of the egg.

  4. Whip the egg white to stiff peaks and gently fold it into the mixture.

Bake and serve

  1. Pour into a small buttered pudding dish and bake at 400°F (200°C) for about 8 to 10 minutes.

  2. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Arrowroot
Thickens the milk into a smooth, set custard as it heats.
Egg
Yolk adds richness and helps set the custard; whipped white lightens the texture.
Milk
Forms the liquid base that the arrowroot thickens into the pudding.

The step that matters

Folding in the whipped egg white. Folding gently keeps the air in the whipped white, which gives the pudding its light rise. Stirring or deflating it briskly removes that air and leaves a denser result.

Swap the arrowroot
