Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Cut the meat into small pieces.

  2. Mix the salt and pepper on a plate and dip the meat in it.

  3. Place the meat in a pie dish and fill half with boiling water.

Assemble the pie

  1. Wet the edges of the dish, line with narrow strips of pastry, and wet them.

  2. Cover with pastry, press down lightly, trim the edges, and crimp with a knife.

  3. Make a hole in the center for steam to escape.

Bake

  1. Bake in a hot oven at 400°F (200°C) for 20 minutes, then reduce to 300°F (150°C) and cook for 1 hour.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef skirt or steak
Provides the main meat, which becomes tender during the long, gentle baking.
Kidney
Adds a rich, savoury depth of flavour to the filling.
Boiling water
Adds moisture that cooks with the meat and forms a savoury juice inside the pie.
Short flaky pastry
Forms a crisp, tender, flaky crust that encloses the filling.

The step that matters

Bake in a hot oven, then reduce the heat. The initial high heat quickly sets and browns the pastry so it stays crisp. Lowering the temperature afterwards lets the meat cook slowly and become tender without the crust burning or drying out.
