Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Becomes tender through long, gentle simmering and gives the stew its main body and flavour.
Potatoes
Soften during stewing and thicken the gravy as their starch releases into the liquid.
Onions
Break down during simmering, adding sweetness and body to the gravy.

The step that matters

Simmering gently with occasional stirring. A gentle simmer keeps meat tender without toughening its proteins, while stirring prevents starches and sugars from sticking and scorching on the base of the pan.
