Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. Sift baking powder through the flour.

  3. Rub in the butter and stir in enough sweet milk to mix into a dough.

  4. Divide the dough in half and roll each half out to about ½ inch thick.

Bake and assemble

  1. Place one round in a greased round tin and spread thinly with melted butter.

  2. Lay the second round on top and bake for about 20 minutes.

  3. Once done, separate the layers and spread both with butter.

  4. Heap the mashed strawberries, mixed with sugar, on one layer and place the other on top.

  5. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough once mixed with liquid.
Butter
Adds richness and tenderness to the dough and moistens the layers.
Baking powder
Releases gas in the oven so the dough rises and becomes light.
Sweet milk
Hydrates the flour so the dough holds together.
Fresh strawberries
Provide fruity flavour and moisture to the filling.

The step that matters

Rolling the rounds to an even thickness. Even thickness lets the dough bake through and rise evenly. Rolling too thin produces a dry, dense result, while thick spots may stay doughy in the middle.
