Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the meat

  1. Wipe the meat with a cloth dampened with cold water.

  2. Dredge the meat with coarse sea salt, black pepper, and flour.

  3. Place the meat on a rack in a baking pan or steamer.

  4. Cover the bottom of the pan with flour.

Roast

  1. Place the pan in a 400°F (200°C) oven.

  2. Wait until the flour in the pan turns brown.

  3. Pour enough hot water into the pan to cover the bottom.

  4. Baste the meat often.

  5. Cook the meat for 1 hour and 45 minutes.

Make the gravy and serve

  1. When done, pour off the fat from the gravy.

  2. Add 1 cup of boiling water to the remaining liquid in the pan.

  3. Thicken the gravy with a paste made from 1 tablespoon of flour and a little cold water. Stir the gravy well.

  4. Boil the gravy for 2-3 minutes.

  5. Season the gravy with salt and pepper.

  6. Strain the gravy.

  7. Serve the roast leg of mutton with the gravy.

What each ingredient does

Leg of mutton
Is the main meat, cooked whole so the outside browns while the inside stays juicy.
Flour
Browns in the pan to flavour the drippings and later thickens the gravy.
Coarse sea salt
Seasons the meat surface and helps form a flavourful crust.
Black pepper
Adds a sharp, aromatic seasoning to the crust of the meat.

The step that matters

Wait until the flour in the pan turns brown. Flour that is pale stays raw-tasting, while flour browned past a rich colour turns bitter. Browning it fully before adding liquid builds the roasted flavour the gravy depends on.
