Beef Roll

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the roll

  1. Chop the bread and meat finely and season with salt, pepper, and a little chopped onion.

  2. Mix the chopped bread, meat, and onion with the beaten egg.

  3. Roll the mixture in a sheet of buttered parchment paper.

Bake and make the gravy

  1. Bake at 350°F (175°C) for one hour.

  2. When the juice begins to ooze out, add a little water to the pan to prevent the gravy from burning.

  3. Add a little tomato and butter to the gravy and thicken.

  4. Pour the gravy over the meat or serve it separately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round steak
Forms the main body of the roll and provides the meaty flavour and texture.
Egg
Binds the chopped bread and meat so the roll holds together when sliced.
White bread
Soaks up moisture and keeps the filling tender and light rather than dense.
Salt pork
Adds fat that keeps the meat moist and carries savory flavour through the roll.
Butter
Adds richness and helps the gravy brown and thicken smoothly.

The step that matters

Adding water to the pan when the juice begins to ooze. Meat juices and fat can scorch on the hot pan bottom and turn the gravy bitter. A little added water keeps the drippings from burning while they concentrate into gravy.

Swap the onion

How well each one fits the dish's main ingredients (pork, egg, bread, pepper, butter, tomato):

  1. Capsicumfits better
  2. Potatofits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against pork, egg, bread, pepper, butter, tomato. Candidates are from the same food group and used in at least 100 recipes.
