What each ingredient does

Winter squash
Forms the main body of the dish and provides most of its texture when mashed.
Butter
Adds fat and richness, carrying flavour and smoothing the mashed texture.
Sugar
Adds sweetness that balances the squash's natural earthiness.
Cream
Adds moisture and richness to a squash that has turned dry.

The step that matters

Steaming until fully soft. Squash that is still firm will mash unevenly and taste grainy. Cooking it until a knife passes through easily gives a smooth, tender base for seasoning.
