Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a smooth, creamy body to the sauce.
Egg
The yolk thickens the sauce gently with heat, and the whipped white adds lightness.
Powdered sugar
Sweetens the sauce and dissolves smoothly into the butter.

The step that matters

Cooking over boiling water while stirring constantly. Egg yolk proteins thicken the sauce as they warm, but they set and can curdle if the mixture overheats. Constant stirring spreads the heat evenly and keeps the sauce smooth.
