Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Emulsify the cream and milk and add richness to the custard base.
Egg whites
Whipped to stiff peaks, they lighten the mixture and give the ice cream an airy texture.
Cream
Adds fat, which makes the ice cream smooth and rich rather than icy.
Sugar
Sweetens the base and lowers the freezing point, keeping the ice cream softer.
Bananas
Add fruity flavor and moisture to the mixture.

The step that matters

Fold the beaten egg whites into the cream mixture. Stiff egg whites trap air that gives lightness; overmixing them deflates the foam, so the ice cream turns dense and heavy.

Swap the banana

How well each one fits the dish's main ingredients (cream, milk, egg, sugar, vanilla):

  1. Strawberryfits better
  2. Figfits about as well
  3. Coconutfits about as well
  4. Bananathe original

Fit is the average pairing score against cream, milk, egg, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
