What each ingredient does

Fresh strawberries
Supply the fruit, flavor and juice that the sugar draws out.
Sugar
Draws moisture out of the fruit to form syrup and helps preserve it.

The step that matters

Pack into cans, pressing out air carefully. Pressing too hard crushes the berries and releases excess juice, while trapped air pockets can let the fruit oxidize and spoil. Packing evenly keeps the fruit submerged in its syrup.
