What each ingredient does

Trout
Is the main protein, cooking through quickly to a flaky texture while the outside browns.
Fine cornmeal
Forms a crisp, golden coating that browns in the hot fat and protects the fish.
Salt pork
Renders fat into the pan, adding savory flavor and helping the fish fry.
Butter
Adds fat for frying and contributes browning and a rich, nutty aroma.

The step that matters

Fry quickly and turn only once. The cornmeal crust sets and browns in hot fat before the delicate fish overcooks. Repeated turning tears the coating and lets the fish steam and fall apart, so flip it once.

Swap the parsley

How well each one fits the dish's main ingredients (pork, butter):

  1. Sagefits better
  2. Thymefits better
  3. Garlicfits about as well
  4. Parsleythe original

Fit is the average pairing score against pork, butter. Candidates are from the same food group and used in at least 100 recipes.
