Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whipped, it gives the charlotte its light, airy body and moisture.
Gelatin
Sets the mixture as it cools, so the charlotte holds its shape when turned out.
Powdered sugar
Sweetens the filling and dissolves smoothly into the warm cream mixture.
Baker's chocolate
Provides the chocolate flavour and firms the filling as it chills.
Ladyfingers
Form the crisp, absorbent outer shell that holds the filling in its mold.

The step that matters

Dissolving and cooling the gelatin before folding in the whipped cream. Gelatin must fully dissolve in hot cream, then the mixture must only thicken slightly. If it sets too far, the folded cream will lump and the filling becomes grainy and uneven rather than smooth and airy.
