Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Line two medium-sized cake tins with buttered paper.

Make the batter

  1. Cream the butter and sugar together.

  2. Add the sweet milk and mix well.

  3. In a separate bowl, combine the flour and baking powder, then stir into the butter mixture.

  4. Beat the egg whites until stiff and fold them into the batter.

  5. Lightly flour and fold in the sliced citron and chopped almonds.

Bake

  1. Pour the batter into the tins, smoothing the tops.

  2. Bake slowly until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air, giving the cake a light, airy structure as it sets.
Flour
Its proteins set during baking, forming the cake's main structure.
Butter
Fat coats the flour, tenderizing the crumb and adding richness.
Sugar
Sweetens the cake and helps tenderize it while creaming with the butter.
Baking powder
Releases gas when heated, helping the cake rise in the oven.
Almonds
Add nutty flavor and a firm, chewy texture to the crumb.

The step that matters

Folding in the egg whites. Stirring vigorously deflates the whipped whites, losing the air that makes the cake light. Fold gently and only until combined.
