What each ingredient does

Cauliflower
Forms the main body of the dish, cooking to a tender texture in boiling water.
Corn starch
Thickens the boiling water into a smooth sauce as its starch swells when heated.
Butter
Adds richness and a silky mouthfeel to the sauce as it melts.
Lemon juice
Adds acidity that brightens the buttery sauce and balances its richness.

The step that matters

Stirring the corn starch into the boiling water. Cornstarch must be fully wetted in cold water first, or it clumps. It thickens only once the mixture is boiling, so the sauce sets properly as the starch swells.
